Cornbread recipe has a legume surprise (ELIZABETH PUDWILL, 5/27/08, Houston Chronicle )

CORNBREAD

* 1 cup yellow cornmeal
* 1/2 cup all-purpose flour
* 1/2 cup sugar
* 1 teaspoon salt
* 1/2 teaspoon baking soda
* 1 medium onion, chopped
* 1 (15-ounce) can creamed corn
* 1 (15-ounce) can whole-kernel corn, drained
* 1 (15-ounce) can black-eyed peas, drained
* 1 tablespoon baking powder
* 2 eggs
* 1 cup buttermilk
* 1/2 cup oil or bacon drippings

Preheat the oven to 350 degrees. Grease a 9-by-13-inch baking dish.

In a large bowl, mix all the ingredients together. Pour into the prepared dish and bake for 25 to 35 minutes or until golden brown. Cool 30 minutes before serving.

oj,
Leave out the "or" before bacon drippings!
This recipe would suck with canola or other PC oils!

Keep the "or"; replace the "oil" though with "lard."
