It may be that some genetics allow one to live in our lazy, fat-and-sugar-filled modern world without becoming bloated.

But as has been noted elsewhere, there are no (few?) fat Amish.

You cannot eat the farmer's breakfast and wish to remain skinny unless you intend to work like a farmer. Genetics may play some role, but shoveling the biscuits and gravy into your piehole like there was no tomorrow also has an impact.
