Relatively low in carbs and high in fiber, the cauliflower family also contains health-promoting, cancer-fighting phytonutrients. ROASTED CAULIFLOWER AND BROCCOFLOWER WITH CHERRY TOMATOES
SERVES 4* 3 cups cauliflower (cheddar if available), cut into florets
* 3 cups broccoflower, cut into florets
* 2 cups tart cherry tomatoes
* 2-3 teaspoons olive oil
* 1/4 teaspoon kosher or sea salt
* 1/4 teaspoon freshly ground black pepperToss all ingredients, spread one layer thick in a large baking pan and bake at 350 degrees until tender (30-40 minutes).
