OH, TO LIVE ON...

Taco Mountain (Seattle PI, 8/06/08)

3 pounds ground turkey

2 1-ounce packets taco seasoning

2 9-ounce bags tortilla chips

2 cups shredded cheddar or Mexican blend cheese

1 16-ounce jar salsa

4 tomatoes, chopped

1 small head of lettuce, chopped or shredded

In a very large (preferably nonstick) skillet, cook turkey, stirring often to break up pieces (if it is sticking to the pan, add a little oil.) Add taco seasoning to taste and stir well to combine. Cook until no trace of pink remains.

On a very large platter, make a layer of chips. Top with cooked turkey, cheese, salsa to taste, tomatoes and lettuce.

I find that I never enjoy turkey in Mexican food nearly as much as ground or shredded beef.

Turkey is for sissies.

Unless it's an entire turkey breast braised in red mole.

Beef or pork baby.

Of course this is a gringo recipe anyways. Man, am I going to miss real Mexican food once I leave Chicago.

Is Jim in Chicago going to be Jim in Skokie or Jim in Downer's Grove now? You can't get good Mexican food in the suburbs.

Basement? Thanks to the Susquehanna and Chenango rivers most Binghamton basements flood too often for baseball.
